Anyone have any good receipes for a beef tenderlion? Thanks

    I've butterflied them and made a stuffing. The stuffing consits of chopped pancetta, chopped purple onions, chopped mushrooms, parsley, garlic, chopped mushrooms, green onions, and a little dry red wine, salt and pepper. I.ve even added a coupe lobster tails in there also.
    Take the pancetta asn crisp it up in a skillet with a little oil, remove and drain most of the fat. Then add the onions and garlic. Cook til soft, toss in the mushrooms and the rest of the ingredients except the wine and cook till the mushrooms give up their liquid. Now add the wine and cook until it has reduced to 1/2. Mix in the pancetta and remove from the heat.
    Lay out the tenderloin and sprread trhe stuffing, add lobster of you want now. Roll up the tenderloin and tie it up every 1 1/2" - 2"
    Sear over open lava flame 2 minutes each side. Let restfor 15-20 min and bring the egg down to 350. I cook it indirect with a drip pan @ 350 until it reaches 133-135 internal for medium and let it rest 10 minutes before carving, but others like it more towards medium rare which would be 125-130 when you remove it.[p]good luck!
