What Happens to a Butt if pulled @ 185 deg.?

Help! [p]Pulled Pork due at Memorial Day Party & two (2) butts are at 185 deg. How will they come out if I take them off at 185? [p]Your help will greatly be appreciated. [p]Thanks, [p]Sparky

    Sparky,[p]It is certainly safe to eat over 150 deg (+-). The pork will be a bit more "juicy" at 185 than 200 internal. It might be a bit more tender at 200 but I think the biggest difference is one will still have a little more fat than hasn't broken down and drained out. If you gotta hurry - raise the temps. If you have to rush - wrap in foil and bump it up to 300 - it will cut atleast 1 hour off but you loose the crust (Mr Brown).[p]Tim

    Sparky,[p]Check it for tenderness; if you can stick a fork in it and twist the fork easily, it's done. It may even be pullable. If not, as Tim said, it's certainly edible.[p]Cathy
