Thanks for the recipe. One other issue i would like to resolve.
I am concerned that with a whole lobster that the tomally will fall out it i put it with the meat side down. Should i use the plate setter and really high heat?

Bruce, I've only used this recipe on tails. Using really high heat may make the cook hard to control. Dwelling them them on their backs helps hold the butter. I wonder if you can make a little foil vest to contain the liver while they are belly side down? LOL

thirdeye,we have done several cooks using this recipe based on the MANY recommendations of fellow eggers here on the forum...I would never cook another lobster unless it was done this way. It is extraordinary, one of the best cooks on Mr. Egg. JCA did some at Eggtoberfest this year, unbelievable taste....
