Naked pointed you to my prefered technique. I think you will find that a hotter faster cook, like the one in your cookbook, will not give you sufficient time to breakdown the colagen and render the fat.[p]Now this is assuming you have the most common kind of country ribs.....the kind cut from the shoulder. If you have strips of the loin end (ie: lean) then I would cook those more like chops or a steak.[p]Have fun!
