Brisket help and an interesting find at the store today.

I am going to learn to cook a whole brisket this year. Most have been disasters.
Please give me best recipes and techniques. I don't want to pull it. So after cooking should I cool awhile before slicing?[p]Jerky tommorrow, brisket Sat. night for Sunday.[p]While purhcasing my small 12 LB. brisket, I happen to stroll by the liquor dept. It is late for me. Budweiser has come out with a Beer Energy Drink. I think they called it Bud E. The district manager from Bud was there and gave me one. Wasn't to bad.[p]CWM

I have a series of hints and tips on brisket that I have accumulated from here and the BBQ Forum that might get you started. A lot of it came from DrBBQ's post a while back. It's on the recipe page under Beef.[p]TNW

besides doing the all night thing, covered in cow lick till it hits 190 internal (and how could you go wrong there??) . . .i also advocate the 5 hour method i saw that bbq team from oklahom use and win with (and didn't you try that once). . .[p]coat your brisket in torbinado sugar, wrap and refrigerate overnight. .. [p]fire up the egg to 250 degrees dome temp, with grid over inverted plate setter. . .re-coat brisket with more sugar and rub (again, i advocate the dizzy cowlick). ..stick on the grid for two hours. .. .after two hours, pull the brisket, wrap tight in aluminum foil and put back in the egg for 3 hours). . .remove and let stay wrapped in the foil and towelled in a cooler for a couple of more hours. . .careful opening it up. ..there will plenty of fantastic juices to serve it with in the foil. ..its a little on the 'pot roasty' side, but really tasty and moist. . ..
