    pancetta is actually the exact same thing as "regular bacon", just not smoked (hot or cold), and is air dried to lose much of the water

    nobody does. my point was you don't need to. you heat a ham to the temp you want, not because it makes it safe. the only issue is if it has been precooked, because if you took it to 150-160 again, you could dry it out. so if you don't know whether it is precooked or not, take it only to 140.
