lobster stuffed beef tenderloin w/ pics

on new years day, we had a great little mini-fest at the virginian's carport, with me, and nature boy and hatch and mike O and spawn and some other friends. .. we all cooked up a storm, with 'stuffed' items being the theme of the day. .. brett did some stuffed chicken pieces, hatch did a stuffed leg of lamb, spawn did her stuffed mushrooms. ..you get the idea. ..[p]i did a lobster stuffed beef tenderloin that i saw emirel do on tv and i adjusted for the egg. . .[p]a certain friend of mine in the midwest (who shall go nameless but will know who he is from this post) sent me this righteous prime beef tenderloin [p]DSCN0709.jpg[p]i then butterflied it open[p]DSCN0710.jpg[p]sauted up some diced mushrooms, pancetta, shallots, green onions, parsley, with a splash of white wine. . .[p]DSCN0708.jpg[p]laid that on the beef, along with 3 pre-steamed lobster tails. .[p]DSCN0711.jpg[p]tied it all up neat and snug, rubbed with olive oil, kosher salt and black pepper.. .[p]DSCN0712.jpg[p]did a modified t-rex (seared it in a preheated cast iron pan at 750 degrees for about 2 minutes per side). ..[p]DSCN0716.jpg[p]then pulled it out, let it rest for 20 minutes, then back into a 400 degree egg direct (i should have gone indirect) for about 40 minutes. .. it was hard to get proper internal temps due to the lobster tails. .. i should have pulled it after about 30 minutes, so it is a little over done (medium/medium well. . .would have preferred the meat to be medium rare)... .[p]DSCN0720.jpg[p]but it was delicious.. .everybody scarffed it down. . and next time i will probably just skip the lobster tail. ..while it looked great with the medalian of lobster in each slice. . .the best flavors were from the meat and the mushroom/pancetta stuffing. ..that was good stuff. . .btw. . .finished it off with a brushing of a butter/white wine mix. . ..yummy. .. [p]

    Looks delicious. If you do your next one without the lobster will you cut the tenderloin the way you did this one, or would leave intact and insert a knife in the center throughout the length of meat and push the mixture in? R E

[p]I don't know if you compete, Max, but beef tenderloin and lobster do very well in "Chef's Choice" categories, and that idea would probably walk away with first place.[p]The problem is, in many of these contests, the cost of the entry is a lot more than the prize!     Spawn, Max's daughter gave me the sausage idea. Those are my favorite, I was using fried bacon which is also good.

    Well, Lee I guess that explains why the Dizzy Pig's usual entry of smoked bologna with Velveeta on a Triscuit hasn't hit the winner's circle yet! LOL
    Actually, we've done 'okay' with the crab cakes we've tried, but as you say, the prize money barely outweighs the material costs in this category. I'd rather have Max make this for us on the Friday night (when we trot out the bologna/Velveeta/Triscuits..... or baked potato, right Free Rangers?! LOL)

    i look forward to the dizzy pig baked potatoes every year!!LOL. . ..actually, i did up 3 dozen escargot as a pre-curser to that tenderloin roll. . .and you guys are right about the cost. .. between the tenderloin and the lobster tails, you are definitely competing for glory, rather than cash. . ..

    thats a good question. . ..i think i'd be inclined to butterfly it again (it was actually quite easy to get the good result i had, and believe me, i was more than a little nervous cutting into a beautiful roast like that), but i think i'd do triple the amount of the mushroom stuffing. .. the recipe called for 1/4 pound of pancetta and 4 oz of mushrooms. .. so i'd use a lot more. . ..the mix of flavors in the stuffing was fantastic. . .

    those look yummy pal. . ..we had the same thing on new years eve as a pre-curser to our egged lasagna. . .[p]and i've got a new one for you. ..spawn did her stuffed mushrooms, but instead of mixing in sausage, she just did a mushroom stuffing and then laid some slices of pancetta on top. . .they made for a great presentation. . .[p]and, oh yea, as you can see, your 'gift' was verymuch enjoyed by many. . .. thanks again. .

    Aw man, them snails wuz righteous. I guarantee I had at least 10 of 'em. And thanks much for spearheading (and shelling out the big bucks) for that glorious lobster stuffed tenderloin. I can guarantee you I could not have afforded to serve that thang! That tenderloin was really tender and moist. While you might have preferred it more rare, I thought it turned out excellent.[p]Wish I could have at least had some tender squid. I was real disappointed with those I brought. [p]Good time was had by all, and MAN did we chow down.[p]BTW:
    I had a killer sandwich for lunch today. Spawn's meatloaf!!! And the kids had one when they came home from school and LOVED it!! Thanks Spawn.[p]Cheers

    thanks dude. .. that was a blast as always. ..and there was nothin wrong with them horror movie sized squidlies. ..i ate as many of those as you ate snails. ..so we're even. . .just look at my belly in that picture there. .. looks pretty squidly full to me. ..heeee[p]and i agree with you about the spawn's effort. ...that might have been her best meat loaf yet. . .believe it or not, before i went to bed on saturday night i finished my day with a meat loaf sandwich as well. . . there is none left around here either. ..[p]cheers right back at ya. .. .

    Ha! That was my very first cook on the egg. I had the same problem, The lobster tails messed with my temps and I ended up medium well. I also did not have the plate setter and did not raise the grid, I think that caused the tenderloin to be a little drier than they should have been, but that recipe is mighty tasty.
