You people weren't kidding about ABTs...

I tried Spring Chicken's version of ABTs last night for a couple of friends.... they lasted, oh... about 3 minutes. [p]People... if you haven't tried ABTs... do yourself a favor. Do it. Don't worry that they might be too hot (not temp-wise, but spicy -wise)... even though jalpenos are prominant, they aren't hot/spicy.[p]Any of you chef-types out there know why they weren't spicy-hot even though they are made with jalapenos?[p]Also... why do we call them ABTs?[p]

    One of the King's Men,[p]If you clean them by cutting out the veins and removing the seeds, that will remove some heat. Smoking them for a while does the rest.[p]We took some to a New Years Eve party last night and they lasted about the same time.[p]Welcome to the ABT club![p]Cheers,[p]GrillMeister

  • One of the King's Men,[p]Well, if you did it right you removed the seeds and webs,
    and that's where the great majority of the capsacin is;
    the flesh of the jalapeno is usually not 'that' hot.[p]Depends on when they were picked, and probably on specific
    varieties, too. Just taste the seeds and webs and you'll
    see where the heat is.

  • One of the King's Men,[p]had to share;
    after making and serving a couple dozen with the pulled pork
    for dinner, my kids (12, 10, 10, & 10) decided the name was
    just wrong (God bless 'em), so they voted and around our
    house they're now Awesome Bacon Treats![p]:) HS

  • One of the King's Men,
    Yep, same story. I took some to a party today... What a surprise for some of the guests. I had cut them in half to make them more of a bitesized treat. I think some of the guests thought they were those bacon wrapped water chestnuts. Imagine the pleasant surprise. I don't think anyone complained or tossed them....but most opinions were positive. • One of the King's Men,
    I'm a bit late jumping in but in answer to your question, ABT's originally were introduced to the Forum a few years back as Atomic Buffalo Turds. I have no idea who first created the recipe or coined the name, but within a few months the naughty humor in it was replaced by the simple and more socially acceptable initials. Of course, at tailgate parties and the like, they are probably called their original name. If anyone asks me and I'm uncertain as to their acceptance level of rude humor, I just say it means, "Atomic Buffalo Things" or "Good question... I don't really know."[p]Apparently, there are many versions of the ABT but me and my crowd tend to like the original recipe. All I did was to start freezing the Little Smokies cocktail sausages to help keep the cream cheese from melting out before the bacon was cooked, and cutting the ABT into smaller bite-size pieces to make them go further and easier to eat.[p]Because of my diet I have started substituting lite cream cheese and turkey bacon with very good results. Had some last night along with my usual rum 'n diet cola (actually about four of them.) Today I'm back to drinking water and eat'n bushes so I can lose the 7 pounds I put back on over the holidays. Turkey ABT's are still on the agenda though.[p]I'm glad yours turned out okay. Now you can start experimenting with different meats and fillings. Variety is the spice of life, especially among Eggheads.[p]Happy New Year[p]Spring Chicken

    <p />Spring Chicken,[p]Hey, you're awake. That must have been some party last night based on the deterioration of your typing skills. (grin)[p]Happy ABT New Year to you and Spring Hen!

  • Spring Chicken,
    Thanks for the history lesson (and for passing on your version)... now I'll know what ABT stands for next time a guest asks. Whether they get the real answer will depend on the audience.
