Fire Problems Please Help

Last night I put on a boston butt around 10:00 pm stacked large wood in middle and build the fire out. Went to bed around 1200 am and everything was good. When I got up this morning at 5:30 the temp was 125 i the smoker and food was 114. I restarted the fire ang now cooking again. Should I worry about the butt begin spoiled?


  • No it is not spoiled. The very same thing happened to me on first overnight cook. 2 butts and they were fine.
  • No. It still cooking although slowly. I've had that happen before.

    Think of how many people to tell you to leave meat out to get to room temperature before cooking. Yours was still cooking. Obviously it will just be done later than you wanted but I say Merry Christmas and enjoy it when its done.
  • I got a Pitmaster IQue 110 and it has never happened again. Some folks on the forum don't like it but I would not be without it. I have some OCD tendencies and the temperature variations bother me. I don't have that anymore.
  • Thanks for the advise. I have got the temp back up to 225 and now cooking I guess we will have bbq for dinner not lunch. Merry Christmas
  • Starting at 10 last night you were going to have it for dinner then anyway.
  • Bump the dome temp up to 250 which means the grill level is around 225. Most overnight problems are caused by people trying to cook at too low of temps. At 225 dome, it is nearly impossible to get the meat temp to 200 or takes a very, very, very long time.
