I just got a Large Egg and have used it twice. Are there any yips at getting the egg higher than 500 degrees? I have read quite a bit about the high temperatures for searing, etc. but mine has not gotten there yet.

Be sure your firebox opening is lined up with your lower draft door. Fill the firebox, that line in the manual that says up to the holes is "bull". Open the bottom draft all the way & close the screen, then leave the top off. If that does not get you hot enough, you bought inferior lump.
Hope it helps and welcome to eggdom.
