Great Italian Sausage - First Cook!

Well, I got a little antsy and couldn't wait to cook on my new BGE. Instead of waiting to do the pork tenderloin tomorrow, I fired up the egg for some italian suasage. It was the best sausage that I have ever cooked or eaten. Just amazing.[p]I bought some high quality Mild & Hot Italian suasage from the Fresh Market. I placed a drip pan below the sausages, threw in some apple wood chunks, and smoked them at 275 for 2 hours. Then, I removed the drip pan, brought the temp up to 450 and finished with about 5 minutes on each side. Let them sit about 2 minutes, slided into 1" pieces and covered with lemon juice. Simple, yet delicious![p]Happy New Year!

    Brad, You slid them into 1" pieces of what? Just kidding, I know you meant slice. It seems that everyone is going to stay home, get snockerd, and cook on the Egg tonite. Be safe tonite everyone, let's not have any Rumrunner singed hairdoos tonite. ;=[ I love Jim Beam.
