I will consider my self a hatchling until I get at least 20 BGE meals under my belt.[p]I do not have a Rib rack and stores are closed today. I was going to do my ribs based on the recipe posted by "Cat".[p]1- Will it work out direclty on the grill at 250?[p]2- Should I brine ribs or will they be tender?[p]Thank you in advance.[p]Your humble Hatchling.[p]ps please let me know if this name has been taken before...

Hatchling AKA Spoonman,[p]I wouldn't brine ribs. I would do up a rub. Something simple like Salt, Pepper, Chile Powder and Turbinado Sugar. Don't forget to remove the membrane before you cook them.[p]I've cooked them without a rib rack before, and they came out ok. I just had to flip them a lot.[p]If you have a V-rack, you can just turn it upside down, and use it as a rib rack.[p]

James,[p]Would you also recommend cooking indirect, with a drip pan?[p]Chuck
  • Hatchling AKA Spoonman, love them ribs and sometimes when I do em they come out so good it makes me wanna throw up a rib shack somewhere and call "MoBetta BBQ, With ComeBack Sauce". Here my favored method that one of the better cooks on this forum uses (not talking bout me), and in the "cooking" section you'll see a couple suggestion on how to lay em on the grill...if you just ain't got nothing in the way of a rack or vrack , I'd would go ahead and cook em and just try to prop em up against each other, if you cut em in short sections that should make it easier.

chuckls,[p]When I did them without a rib rack, I did them direct.[p]Also, even with a rib rack, I almost always do them direct as well. I never use a drip pan for ribs.[p]
  • Thank you! I'm going to try it direct heat, 250, 3 hours, leaning up against each other.[p]

Hatchling AKA Spoonman,[p]On a large egg, you can usually lay 6 1/2 slabs (that's 3 slabs cut in half) flat on the grid in one layer, membrane side down. I've seen pics where folks stacked them several layers high too. And they say there's a legendary bbq'r that cooked 20 whole slabs at one time, without a rib rack.
  • Yazoo,[p]That picture would be in Chef Wil's profile
  • Hatchling AKA Spoonman,
It is also possible to bring the ends together (like a crown roast) and skewer or even tie them. They will then stand up on there own. You can do the same thing with two slabs by connecting the ends and make kind of a football shape. Flat is fine if you have the room.
