Jon, Serial Griller, stopped by the kitchen. Really great to see him and chat. He came with some gifts. Very kind of him.
A "Texas BBQ Sauce", made in Colorado. :ermm:, fish sauce, tapioca starch, Pizzeria Caputo, tipo 00 flour.
The tapioca starch I will have to reserch on. The flour will get me out of my box. I am very excited to try the recipe that Jon included and just to play with this great flour.

    This is not BGE food, but you will never look back and wish for something else.

    Shrimp, Snow White Prawn, Yen Yen


    INGREDIENTS:
    2 Eggs Whites Only, Beaten Stiff
    3-6 Per Guest Shrimp, 16-20 Count
    Sauce:
    1/2 Oz. Orange Juice, little for light flavor
    1/2 Cup Mayonnaise, Thick/Sweet, Japanese, Oriental
    1/2 Ozs Coconut Milk
    1/4 Oz. Gran Marnier, little for flavor, Optional
    3-4 Shakes Crushed Red Pepper, 1 Tsp.
    Pinch White Pepper, Fine
    Garnish:
    Iceberg Lettuce, Thinly Sliced
    Orange Slices or Wedges, Orange zest for color anf flavor




    PORTIONS OF SAUCE ARE STILL BEING PLAYED WITH SO TRY YOUR WAY
    1 Shrimp, peel, devein, butterfly.
    2 Lay on tray that will fit in fridge, place saran wrap or wax paper on tray, lay shrimp, cover with second layer. Place second tray on top to flatten, place in fridge until chilled, 30-60 min?
    3 Lightly dredge in Cornstarch, Rice, or Tapioca Flour, then in egg white.
    4 Deep fry 350° F. 3-5 min. Use peanut oil if available or vegetable.
    Sauce:
    1 Mix all indredients.
    2 Lay shrimp over thinly sliced bed of iceburg lettuce.
    3 Serve chilled sauce over shrimp, Shrimp hot, Sauce chilled.

    Tapioca flour is like starch and the fish sauce can be lightly added to the sauce-very lightly! Happy holidays.

    Nice! I keep meaning to buy some of that flour. Supposed to be great for my kinda pizza.

    By the way, I looked at the Penzys site today to check the store hours for my local store. Noticed that there are two stores in Colorado Springs, apparently recently opened. One is 5 miles from you!! There goes your Christmas bonus! :laugh:

  • Caputo is a good flour, but even the pizziaolo's in Italy change the flour depending on the season and the humidity in the air.
