great pic going there! The way I do ABT's - mix the pork(about two fists full) with 8 oz cream cheese, a two cup bag of Mex 4 cheese blend, a can of the drained Rotelle (I prefer spicy) and the seasoning of your choice. Mix well, fill the peppers, wrap with bacon and cook direct with a lot of hickory smoke (or you fav) for about 30/45 mins. [p]I also have done a variation where I substituted leftover brisket (seasoned with fajita seasoning) for the pork and stuffed a poblano pepper instead of jalapeno. Fired it up the same way, added some beans & rice and that's a mighty fine Mexican chile rellano dish for dinner. Use your creativity - it's fun. Happy New Year! Joe
