I just finished assembling and tying Mr Toads pork loin; but forgot to give the pork a "good pounding". Will it make much difference in the end? Should I dis-assemble it?

As YB said; just cook and eat. About the only difference I could see, would be that you may not be able to get as much fruit; nuts; etc on a loin that had not been pounded flat.
