Whole Fish for Dinner

Hi,
I have been planning on doing a whole fish for a while. I finally tried it for a party we were having. I found this nice Red Snapper at Costco.
I sliced the skin in three places on each side and rubbed it inside and out with seasoning, EVOO, fresh garlic and lemon juice. I stuffed the belly with "aromatics" such as lemon, onion and garlic. I wish I had some fresh herbs.
I put it in a grilling basket from William Sonoma which I got as a gift and put in on a raised grid, direct at 350.
I flipped him toward the end of the cook to better cook the topside and kind of lost the skin and the tail :ohmy: ...but it tasted good.
Not everyone was a fan of the "head on" presentation, but the flavor was good.

I see these Snapper also at Costco, and trying one is on my bucket list of things I want to cook. However, my reading glasses and getting my eyes real close the screen make me believe that fish had a price of $18!!! Boy, they are proud of those fish :ermm: ! Obviously would be much more at a Central Market or like.....

We have been cool, better the last couple of days at -7 or -8*. That's like high teens which is pretty good for these parts.

Love the mild flavor of those Costco snapper. If you ever get them again, here is a simple cook I did a while back that came out great. Based it off of something I saw some locals doing in the Bahamas years ago.
