Turkey cooking fast

I have had my turkey on for only a little under two ours and it's already at 125 breast. Will it plateau like other meat. My egg temp has been around 350.

No, it won't plateau. How big is the bird? Knock the temp of the Egg down if you need to buy time...350* is pretty high for turkey imo.

Turkey will not plateau.
Lower your temps and wait it out best you can. The good news is you can tent it under foil when it's done and it will hold for a couple hours with no problem.
