Great new cheese for Christmas! Rubbed extra sharp white cheddar with instant coffee crystals (Folgers, a sprinkle of both cinnamon and chili powder and smoked over apple for the first half hour then switched to cherry. Next time I will add some cocoa powder for more of a mole' flavor.
