What is this Æbleskiver stuff, and who has recipes?

    This recipe goes back to my grand parents
    1 egg
    1 cup milk
    1 cup flour
    3 T sugar
    1/2 t salt
    3T butter
    1 1/2 t Cardamon seed ground
    2 t baking powder
    Mix all ingredients in a bowl. Grease ebleskiver pan. Fill half full.
    Roll dough over so that its round when finished

    Frank has a great post. I like to use my pan for stuffed mushrooms, makes a great cooking container.

    Dessert, Æbleskiver, Frank From Houma

    "Aebleskiver - a Danish dessert, like doughnut holes, but sweeter and much better traditionally served with glogg during the Advent. Cooked in a cast iron pan that resembles an egg poacher. Serve hot with syrup, jam or powdered sugar."************Mixed up a batch of Æbleskiver batter, divided it in half, and added a banana to half of the batter.******After yesterday's Æbleskiver I thought I would try to make some savory Æbleskiver. *******Adjusted the original recipe by taking out the sugar and substituting instant potato flakes for flour. Okay it's a little weird - we never have instant potatoes. ********Went plain just to see if it would work. Next time some garlic, bacon, cheese, etc.


    INGREDIENTS:
    2 egg whites
    2 cups all-purpose flour
    2 tsp baking powder
    1 Tbs white sugar
    1/2 tsp baking soda 1/2 teaspoon salt
    2 egg yolks
    4 Tbs butter, melted
    2 cups buttermilk
    1 cup vegetable oil for frying




    PROCEDURE:
    1 In a clean glass or metal bowl, beat the egg whites with an electric mixer until they can hold a stiff peak. Set aside.
    2 Mix together the flour, baking powder, salt, baking soda, sugar, egg yolks, melted butter and buttermilk at one time and beat until smooth. Gently fold in the egg whites last.
    3 Put about 1tablespoon of vegetable oil in the bottom of each aebleskiver pan cup and heat until hot. Pour in about 2 tablespoons of the batter into each cup. As soon as they get bubbly around the edge, turn them quickly (Danish cooks use a long knitting needle, but a fork will work). Continue cooking, turning the ball to keep it from burning.
