To Brine or Not To Brine....that is the question
The Bean

I'm doing a trial run tomorrow of Mad Max's turkey and wanted to get everyone's opinion of brining for this recipe. Do you suggest this or not.....if yes, please share a recipe for a good brine! Thanks.

isn't meant to be the start of a dueling links war.
Harold McGee is the author of the material on the link and if you hang around here you will see his material quoted or linked to often.
Mad Max uses a fresh Turkey that is not brined.
Hope this helps.

I brine - yes. This is how I do it....

Even when I've done Mad Max's recipe I still brine... I like it! -

I brine when "non-Egg" cooking to add moisture. Have found no benefit in brining when Egg cooking in the area of added moisture.
I do brine however when I want to impart a unique flavor to the meat. By adding ingredients to the brine the flavor goes throughout the meat.
Why not cook two - one brined and one not - let us know how they turn out!Kent Madison MS
