Roast chicken & leftover enchiladas

Last weekend we had such beautiful weather. Perfect for egging! It is the beginning of our citrus season so I mixed up a paste of John Henry's Texas Chicken Tickler and lemon, lime & orange zest to put under the skin. More John Henry's on the outside of the bird, then put onion, garlic, rosemary with lemon & orange sections inside.

4pm and still over 70 degrees.

On the egg at about 400 for 1 1/2 hours.

Carved up, nice and moist.

Last night used the leftover shredded chicken for green chile chicken enchiladas. This pic was taken with my new Droid Incredible and uploaded to Photobucket from the phone. I know I am late to the game, but you've gotta love technoligy!

Teresa the meal as all ways looks great. I especially like the enchiladas with the roasted chicken! :woohoo: Don't feel bad about the phone. I still got a Razor that I have had for 7 years!!LOL

That is a BIG chicken :ohmy:
The chicken enchiladas look good as well.Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given another Mini to add to the herd. -
