Pit Beef

Egged a chuck roast today and though it didn't turn out as well as I would have liked, it was good. Many factors - the roast was probably too lean, I egged direct (should have gone indirect), and I just got in too big of a hurry! Alas - we will have leftovers and I've doctored it up a bit so I think it'll be good.
The roast - rubbed with DP Red Eye:
Sauced with Bone Su@kin sauce mixture that included a a couple or 4 tablespoon of homemade peach jam.
Slathered and sliced in small pieces - ended up adding beef broth to the leftovers to juice it up a bit....

That aint "Pit beef" in these parts...not that it looks bad or anything..but it's not "Baltimore" or delmarva pit beef

Looks mighty tasty Elizabeth. I haven't tried pit beef yet, but I am about to put a brisket on. Pork is still my fav., but I've been craving beef for a week or two. This post pushed me over the edge!

i'm in no position to judge what makes it pit beef.
I do however think that sandwich looks mighty tasty

Honestly, I know I could have done a better job - I was in a hurry, and didn't have the proper set up. It was okay yesterday - but today it was GREAT. Now if I can just remember all the stuff I added to the sauce... For Alabama Pit Beef, it was quite good.

I will try this again after the holidays - it's good. It was tender enough, yet not the point of falling apart. Where there's a will there's a way - thanks for looking.

Thank you - it's much better today. I guess the overnight "juicing" was a good thing. I'll choose a better cut of beef next time and post pics of the end result. For now, I'm enjoying a BBQ Pit Beef Sandwich - Alabama style!

Not in the least - it's all good. I'm very sincere when I say this - it's a most wonderful time of the year. This forum has been good to/for me. If you have some tips to help me on the next roast, I am all ears!

I know what you mean about learning every time you cook - it's that way for me too. Actually, most of the things I've learned in life have been by screwing something up! :woohoo: This was not my best cook - or at least that's what I thought yesterday. Today, it tasted much better.....Thanks for the encouragement. (and the email)..
