What is the egg set up for cooking this dish? I am trying to figure whether I should cook indirect with a plate setter, grid and then perhaps the flank steak rolls on an elevated grid? Or direct?[p]And - is the basil dried?[p]Thanks!

Should this be marinated overnight or just for an hour or so?[p]Thanks

matt,
in answer to both your questions. .. [p]i simply lay them directly on the grid set over inverted plate setter. . .you can put a drip pan, or piece of foil on top of the plate setter if you want to to catch any drips, but thats all you need to do. . .[p]as far as marinading time.. .a few hours is sufficient, but if you want to set them in marinade the night before, no harm done. . .
