Tried a little different tonight, instead of skin side down then flip to rib side down, cooked rib side down the entire cook. The skin was crispy and the meat was perfect.8e78afcc.jpg

    That always works for me. I never flip, or even look at it for about an hour.

    That's what I always do. Have never flipped a spatch.

    I hate it when I go to the kitchen for food and all I find are ingredients!

    Same here, never flip: cook high in dome direct at 400
    Salado TX & 30A  FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given another Mini to add to the herd.
