smoking chicken

Smoking some rather large bone in spilt breasts. Some with skin and some without. (silly dieters). Marinated in a vinegar based BBQ sauce. Using pecan chunks. temp will be about 250. How long should these cook? Is temp right?

    mktimber,[p]I would probably raise the grill temp to about 325 - 350, like a normal cook unless you are wanting to slow the cook to increase the smoke flavor. I usually put the breasts on, bone side down, and cook for about 25 - 30 minutes. A surefire way to be happy is use a meat thermometer and hit 180 internal.[p]My two cents![p]BillT

    you really cook your breasts to 180°?[p]Might wanna try one at 160-165° one day and you will really be happy.

  • I am going for a low and slow smoking, so I am keeping the temp down. The chicken will usually be done in 1-2 hours, but I want it to be very tender. Just trying to find the perfect time so as not to get it too dry.
