Mad Max modified turkey update
Mark Backer
Posts: 1,018
The turkey ended up taking about 5.5 hours to cook, but as Max said, the breast was a perfect 165 and the thigh was a perfect 180 right at the same time. [p]Covered with foil after cooking for about 30 minutes, then uncovered it to the ooohs and aaaaahs of everyone there. Proceeded to carve the juiciest turkey I've ever seen. I actually got tired (not really) of hearing "this is the best turkey I've ever tasted." Literally. The dark meat was so juicy and rich it was almost like eating duck. [p]I have a few leftovers and, per max's advice, I think we're gonna make a turkey pot pie today. HOORAY![p]Next up: either a bacon wrapped pork loin or a tenderloin or two with a little Raging River on them. [p]Hope everyone had a great Christmas and is already planning their New Year's Eve menu like we are.[p]p.s. Thanks max for taking the phone calls from the guy in georgia that was a little full of holiday cheer...

mad max beyond eggdome,
Didn't realize you were local - we live in Leesburg. Thanks for all the prime rib tips - it turned out fantastic. Seared over roaring flames at 600+, rested for 10 minutes then cooked to 130 at 325 over apple wood. Absolutely wonderful. Have a happy new year.
