<p />Thanks Mad Max for your turkey method. I did one for Christmas dinner yesterday and the family (extended bunch, I might add) liked it so much that they insist that I do ALL the cooking for future family get-togethers. While I appreciate the nod, I'm sure going to miss those people!!![p]Seriously, the turkey was the best ever and the gravy was so good it would make a Southern boy slap his own momma (and that just doesn't happen). I did the bird as directed with a small chunk of apple wood for smoke. I also made some really good yeast rolls and some cranberry sauce. A good time was had by all.[p]The pix is the bird about an hour before being done.
