I know you're supposed to let a brisket rest 2-3 hours, but what's the minimum amount of time you can get by with?

Yazoo,[p]You'll notice a diff after a half hour, but I always go an hour at least anyway. Heck, by the time I'm done wrapping it, 15 minutes are passed. By the time I end up cleaning the mess I made wrapping it, another 15 went by. Of course I've pulled off 3-4 little bark pieces to chew on by then. I'm weak.[p]mShark
