Boneless Wings

I am looking for a way to cook boneless wings on the egg. Love the way the egg adds smoke to buffalo wings. Wife not a big fan of the bones in Buffalo Wings and loves the boneless ones at Buffalo wild Wings.

  • What cut of meat are you thinking about for you boneless wings?

    I think the boneless wings you get at most places are cuts of breast tenderloin, very lean and more susceptible to drying out.

    If I was going to try to make "boneless wings", my first thought would be to cut up boneless thighs into 1 to 1.5" chunks. Brine them for an hour.

    Dry them and then let them air dry in the fridge for another hour or two.

    Season them with your favorite rub.

    I do wings 375 for an hour but these are smaller and have no bones, so you'll have to guess down the times.

    Cook indirect at 375f for 15-20 minutes. Flip them and go another 15-20 minutes depending how they are looking and temp checking.

    Then toss them in the sauce you want to use. (I like either of these sriracha sauces:

    And cook them for another 5-10 minutes.

    Again, I haven't tried this, it's just a guess on my part.
