What difference is created by using it legs up verses legs down? What scenarios is it beneficial to use it with legs up verses down? Thanks in advance.

I use my platesetter with the legs up if I need to put a drip pan under what I am cooking or if I want more even heat on both sides of what I am cooking. One thing that I use my platesetter with the legs down for is to put my pizza stone on. For me, this allows for more even cooking of the pizza dough and the toppings.

In general I use legs up for Q'ing and legs down for pizza and baking

A variation on what smokey said. I do quite a bit of baking. You could bake directly on the setter legs down. However, in baking I like to use the setter legs down with the pizza stone setting on the egg feet. It gives a little insulation. I like to think it also gives some air flow but I'm not sure abut that. It just seems to do a better job in baking. Good luck.
