always looking for another way to eat good bread, thought a cross between pesto & French toast might be a real good combination - put together a basic pesto substituting eggs for the olive oil. Slice down a baguette & spread the mixture on with a knife (the resultant sludge is a bit cement like so you won’t be able to dip the bread in as usual) & into the hot olive oiled cast iron. I did them one side at a time in batches & removed to a pizza grid, then did the opposite sides & back to the grid. When done, I gilled some shrimp as a topping, then put the grid with pestoasts back on for a few minutes to heat them all the way through:
