Smoked Oysters . . .

A nice appetizer . . .[p]The cooker was preheated to 250º dome. The oysters were drained, placed, and spaced on a pizza pan with holes in it placed on the main cooking grid. The smoke was from a hand full of dry pecan chips placed on the fire and the smoking commenced. Smoke till your preferred doneness, but be careful not to over cook or smoke too much.[p]When they start wining because the turkey ain’t ready, stuff a few in their mouth . . .

Forgot to mention that the oysters were seasoned with a favorite fish seasoning prior to the smoke . . .

Puj:[p]That is one thing I do not like about Atlanta . . . easy access to a variety of fresh seafood. I just came back from Sam's and they are all out of some very competitively priced oysters. So no smoked oysters this evening![p]Although I have not been there in a couple of years, when we go to Tybee Island we forget about restaurants. Trips are made to a couple of fish markets for the daily feast. I just love grilled fish![p]Merry Christmas PujClan!
