New user doing a prime rib

I have just bought a large BGE and am already thrilled. I have a 10 lb. prime I will cook Christmas day. Unfortunately, I cannot find a plate setter. Am I ok using a pan with the roast in the V rack? At what temp and for how long should I cook it? I will have the meat thermometer but just trying to plan the day.[p]Also, does anybody know Snider's rub for prime rib? Good or bad?[p]Lastly, my egg seems to be running hot. How do I test the thermometer? Even with the vents nearly closed I am near 400.[p]Thanks!!

    Welcome![p] Test your thermometer in boiling water. Should read 212.[p] Scroll down the page for a long thread on prime rib. I'm cooking one too for the first time, so I have no advice other than kepp reading.[p]Scott

    first, welcome aboard!! . .you are in for a treat here on the forum and with your egg. ...[p]first, lacking a plate setter, a large pan with v rack above should work ok. . the key is in deflecting the heat. . ..i would maybe use a couple of roasting pans, set across each other. . .it would create 1. a better heat barrier and two, raise the roast up into the dome a little better. ..[p]second, no reason you shouldn't be able to sustain good temps below 400 degrees. .. sounds like two things could be happening. . 1, you temp guage is off . . .pull it out and stick it in boiling water to test accuracy.. .you adjust it by turning the little nut on the back. . .second, when firing up your egg, don't let temps go way out of control. . .keep the vents wide open only long enough to get near your target temp, then start closing them up till you get to the desired temp[p]as far as cooking guidance, here is a link on how i do mine. . .[p]http://www.nakedwhiz.com/madmaxprimerib.htm[p]its really an easy piece of meat to get excellent results with. ..just don't over cook it. ..

    Thanks for the tips and link. Any idea at all how long a 5 boner might take? I have to leave the house for about 2 hours and have all day to get er done.

    how much does it weigh? . .. again, figure about 15 minutes per pound. . .if its a five boner, its probably in the 11 pound range if a understand rumrunner correctly, so it should be ready in a little over 2 1/2 hour range, although i'd keep close tabs on it starting around the 2nd hour. . .you absolutely don't want this one gettng away from you. ..     Its about 10 1/4 lbs. Gotcha on the time and I am being a bit thick headed today.[p]On the double drip pan part, are you suggesting I stack those on the grill to get those extra couple inches? I saw the thread Lynn did below and all the good advice she got. Wish I had the plate setter! But I now have a better idea of the concept, just trying to learn the specifics. [p]Thanks again!

    yep, that exactly what i'm saying. . .put a pan on the grid (like a 13X9 cake pan), and then set your roasting pan across it so that air can get in between the two. . .that should work just fine. . ..[p]
