A tip for ya all

I just got done boiling the carcass for the bird. I have a buch of water bottles in the freezer for hikes/workouts, ect. To help cool the stock faster I threw a few of them in the pot with carcass.

Thats what Alton Brown does on his stock-making show.
He also puts his stock in a cooler rather than a refrigerator to cool it down. -
Yep, the Alton Brown trick (or at least, that's where I learned it from...I'm sure others thought of it long before him). I put the pot in a sink full of ice-water, and float the frozen water bottles in the pot. Change out the sink water as necessary. Occasionally stirring up the pot helps speed things along, especially for thick stuff like stews.
