Need a receipe for marinating chicken wings in buttermilk.[p]Nessmuk

    overnight the wings in Bmilk, dip them in egg wash and seasoned flour (salt.pepper & some dried herb) and let them sit a few minutes so the flour bonds to the wings before frying. Use a good Lodge cast iron frying pan.

  • Nessmuk, Last weekend I used a quart of buttermilk to marinate two spatchcocked chickens. I put four tabel spoons of the rub I was going to use into the buttermilk. Marinated the chickens in zip lock bags for 20 plus hours. They were great. What I have read about using buttermilk... it is a way to get flavor into the meat, so I guess add anything you want can be added. I liked using buttermilk becuase my mom and sister are both low sodium people, there was no too salty a brine and no over brinning problems I did think about using the buttermilk for part of the sauce at the end of the cook. I will do that next time. FrLs
