first turkey on the egg and got the dome temp to 350, let that sit for 15 - 20 minutes. then put the plate setter and turkey in which brought it down to 225. Obviously it will go back up but should i start timing (15 - 20 minutes per pound)when i put it in or when the temp gets back up? thanks, i'll save a giblet for you.

It's going to take longer to come back to temp. You should bring it to temp with the plate setter in the egg. General rule everything but the food goes in. It's all fine it will just take longer to get back up.

Don't worry about the time. Cook to the temp of the bird. The times are just a guide.
