Should a 21lb turkey at 325 be done in 4 hrs. I recalibrated my thermometer last night so I now temp is correct.

    You sdhould be within the ball park. I personally cook turkey at 375 which cooks approx. 10 min per pound. Allow 1/2 rest time before you serve and that will give you a little wiggle room. If you finish early, wrap in double foil with shiny side towards the bird.
