11 lb. uncooked ham - removed fat - scored ham - basted last evening and let sit overnight - smoking at 325 with cherry wood

basting every hour - 3/4 cup of peach perseveres, 1/3 cup of fig vinegar, 1/3 cup of bourbon, 1 1/2 tsp of cinnamon, 1/2 tsp of ground cloves and 1 tb of lemon juice - i heated mixture until it began to thicken
