My wife is presently picking up a beef tenderloin from BJ's wholesaler...Gonna cut a few 2" filets for us and try my hand at TREX. Now I've only tried to sear a steak once before, and while good, I couldn't get what everyone here achieves. So here's my plan:

Make sure to burp the Egg when opening.....[p]Wess

Your steaks will be awsome. Just make sure to Burp the egg as Wess Mentioned and if you are cooking Ribeye the fat will cause huge flair ups..just be prepared.
