Using a DigiQ & Thermopen the turkey was170 breast and 180 thigh... Is this even possible????

Yes, I've always seen around 12 minutes a pound at 325*

Yep, normal. 12 mins per pound and at 350.

Mine usually finish in around 10 min per pound but I cook smaller birds because I have a medium and I cook at 375 dome temp.

Definitely possible. I did a 13# in 2 hours a few months ago. I had the same reaction as you but in the end, all the proper temps were hit and it was delicious.
