Finally found some Pork Bellies, any suggestions?

Finally found someone that has Pork Bellies, other then saving them for chefs. Any suggestions on preparing them?

Cure and smoke them for bacon. Makes for some incredible pig candy.

Looks Tasty, I will have to hit up the oriental Grocery to get some of the items. I have a feeling those little piggys running around in the pen where I got the bellies, might be on my plate in the next couple of months. I don't know about you but here in Charlotte finding certain meats is hard to find. I go to Asheville about every 2 months and there is a farm about 15 miles south, that field raises Pork and has grass fed beef, and the prices are not too bad.

I bought some of the farms bacon, i might do that with one of them, wanted to try other things with at least one.

If you look into some of Maangchi's other recipes you will find more for belly. I think she is pretty authentic.

We just switched from Comcast to U-verse, and now have the new Cooking Channel. I stopped watching Food Network some time ago, but the Cooking Channel seems to be returning to the roots of actual cooking instruction shows.
Anyway, I was watching an episode of Jamie Oliver's show earlier this week, which included this recipe. Looked fantastic.

I do them like any other slow cook meat. Give them a really good coat of rub, or soak overnite in maple syrup, and then lo-n-slo till about 90% of the fat is rendered. Sliced thin, makes outstanding sandwiches. In chunks is great with beans.
