I know on the BGE website it says you can fit an 18lb turkey in a medium but...will a turkey that large fit on a vrack that is on an inverted plate setter?
I for some reason can't believe it will...

You don't need a v-rack just place it on the grid. I believe I have cooked a similar sized bird once but there was zero room inside the egg for heat circulation and I would not recommend it. However, if you remove the fire ring it may provide the "space" needed. Also remove your dome thermo or it will get bent on the bird when you shut the lid. Align the rear end of the bird towards the thermo hole to create the space needed and insert the probe after the bird is in there. Like I previously stated, without a reasonable amount of space for heat circulation everything goes out of wack with false temp recordings etc.
