Honestly, being in planes nearly every week, the last thing I would want to do is follow them online. I am so tired of airports and airplanes it isn't funny. But the good news is that every time I am flying home, I love planning my next cook on the Egg.
I love pork butts. It is really easy and kind of hard to mess up but beyond that, I think it is my favorite cook. I like it fresh, frozen, reheated, in pizza, in quesadillas.... can't go wrong with a butt.
I have done both. And all the reasons stated for either, I find to be true. Bottom line is it really doesn't make any difference. The bark is a small part of the overall finished product. You are going to get bark either way. Try both ways. Do two at once one up and one down. You will probably find that they are both some of the best eats you will ever have.
