I wondered the same thing. Does it have a real gamey taste? Also, is the pork added for the fat or to balance out the flavor?

I had 7 people devour a 14lb brisket on Memorial Day. Only had a couple slices and a handful of burnt ends leftover. The compliment wasn't verbal :-)
