    If you wear glasses and fry meat you should wear a hat with a bill. Keeps the grease that goes up in the air from coming back down on your glasses. Won't help the table or deck but you will be able to see. 2 1/2 to 3 ounces is about the optimum size ball for smash burgers.

    I agree with @lkapigian on using the grinder as a stuffer. After doing it once you will want a dedicated stuffer. It is nice having a freezer full of sausages though, no matter how you stuff them. I even use my stuffer to put bulk sausage into food saver bags, much neater and easier as well.

    I have the STX and I would say it is adequate at best for my needs. Only 3 sizes of grind plates available only from them. Tends to bog down a little when using par frozen meat, but that could be operator error as it may be frozen a bit past par. Wish I had gone with the LEM. I also started with a LEM 5lb stuffer as well, sold it to a friend and bought the 15lb size. When I make sausage I use both butts that come in the cryovac. If I'm going to make a mess, it's going to be a big one  :)

    @northGAcock, I feel your pain. We have had a cat dropped off at the end of our cul de sac several years ago that had kittens. Well one of those kittens has now had kittens. Last Friday morning, on letting out our 4 basset hounds, I heard barking that wasn't normal. I ran outside and found Charlie had one of the kittens and it didn't survive. I, like you, experienced a tremendous amount of guilt. As we live in the country my wife thinks the kitten must have been nabbed by a predator. I haven't the heart to tell her different. :(

    I too bought the LEM 5 pound stuffer as well and it is too small for when I make sausage. I upgraded to the 15 pound one. Really envious of your beast though!
