    I live in Indiana too...although MUCH further south than Mishawaka...I'm down in Noblesville just north of Indy.
    I have spent a lot of time on the road. I've always tried to see eggers in the area I was in. You con them into making you dinner and the food is better than in the restaurants

    I forget you live in Indiana? I'm in SW Michigan. We were in Mishawaka last night...broke down and went to Famous Daves on Grape Rd. No egg yet and too cold for my Chargriller

    Just watched the smoke on my large egg go from white to blue signaling the end of the conclave and readiness to put on my pork loin.
  • Perfecting the Wing

    I've cooked steaks, briskets, pork, cobblers, pizzas etc...and eventually I figure out how to cook them. One food I cannot get is the elusive wing.

    Specifically I'm having trouble with two things. First I cannot for the life of me get them "restaurant crispy". Second, I seem to have a problem keeping my wings from taking on the flavor of the chicken fat that burns off. It is overpowering and shields the sauce at times. (Yes I've tried using a plate setter. That works better but I seem to think it makes it harder to get the right texture).

    So with that being said, can anyone offer me some pointers on how they conquer these two problems...I just got my AR in the mail this week so including it in the solution is an option.

    Well..after staring at it online for 3 weeks....I finally did it. Just ordered my AR Customer Combo. It is time for be to stop sitting on the bench and raise my cooking game (and platform) to a new level!
