    Thanks for all of the input !! I went with a Kenmore Elite ( frigidaire ) 20.5 with all the bells and whistles. ( on sale ! )  outgrew my 7.5 chest freezer.. I'm gonna love this :-)

    I will fire up my XL today to smoke one solitary rack of St. Louis ribs.  I might use my lump reducing ring , I may not. but what I will do is this... I will be able to lay that whole rack of ribs out nice and flat over an 18 in. drip pan . If needed , I can cook six racks of ribs , and not have to worry about cutting them in half or standing them up in a rack.  Just my two cents worth... I love my XL.
     The pic is two baby backs on the " mid -level " 18in grill. I have 24 inches of grill below it , and another 16 inch grill for above it.

    WELCOME !!  If I am doing a low and slow, I will put it in after I get to 250* and then bring the heat back up for smoking. If I'm just doing something like an indirect chicken cook , I will put it in right after I know I have the lump is good and lit. Cold platesetter will act as a heat sink.
  • SPOG

    Ran short on prep time at dinner tonight , so i just threw some SPOG on the chops and egged on. Point is.... Why did I stop using this basic but so tasty combination for so long ? Seems that I may have gotten a little too DIZZY on the Kool Aid !! SPOG ..simple , and tasty :-)
