    Decent sized chicken, small butt or brisket, I even smoked 4 good size trout in mine last camping trip...I actually bought another thermometer fer the camper since I forgot mine over the 4th of July weekend. Will be doing some camping over Labor Day also.

    To reach a certain heat source temp (for direct cooking ) I'm not following how a XL can need (use) more lump than a smaller egg. For L&S, to saturate the ceramics to a desired temp may require more fuel....or more time...or both.

    Not arguing or disputing, only trying to understand.


    a smaller area of fire, 13 inch diameter verse 23 inches diameter or red lump for searing. my mini uses almost nothing. my mini mini uses almost less than nothing. heres a burger cooked on a quarter cup of lump =)

    I bought a MM fer camping and boating.  I used it when we went to NC to camp and was able to treat folks to the wonders that came off of it hopefully starting a new found BGE family here and there!!!
  • Smoked Cream Cheese

    I am a lover of fish/crab dips and a buddy introduced me to smoking cream cheese on the egg...  I do 225-250 fer 1.5-2 hours and coat the cream cheese with your favorite rub or seasoning.  I made it my last camping trip and it don't stay on the table long!!!

    I was able to put 3 on my mini max at one time and could possibly do 4....but pictured is just a 2 fer!

    I didn't see any chatter on cream cheese smoking on here but TRY IT, you'll like it!

    Ann, ifin it's custom fer you to fry mentioned snapper.  Have you ever or can you ever get Amberjack?  That is my favorite fish!  I prefer cutting it into steaks and blacken the stew outta it on the egg!  I also like cutting it into fingers and frying it!  When I smoke it on the egg, I make the most awesome fish dip too!!!  I have all my family in VA and they say AJ is a trash fish so I'm not sure what they think of it in your area. 
  • Long Time No Taste! RIBS!

    Ain't done ribs in a while on my Egg so I got a couple slabs today to give em a whirl! Dusted one w/ Bad Byrons, and the other w/ a garlic herb seasoning (daughter doesn't like hot) I got from the Pepper Palace. They were to long so I had to 1/2 em up. I was going to do them slower then normal, at 200 degrees. Well, the meat started to pull and momma was urging me to make it quicker so I cranked it up to 250. About an hour before they were done, I pulled em and put honey and brown sugar on em and wrapped em. When I took em off, I thought no way they could be done (abut 3.5 hours in) but they were almost perfect!!! A few bones fell off so points deducted!!!
