  • Re: OT - Umpqua Community College

Its shameful that these events happen.  But its not a gun control thing.  Its a mental health issue that has been ignored by the medical and political institutions.  I am in medicine, thank God its only Orthopaedics, but I feel confident in saying that the mental health divisions have been far overlooked and under-funded.
Says the guy with a shotgun as his handle pic...  While I agree with you that the mental health issue in America is quite disturbing and I have made this same argument in the past, this shooting and the live TV first person shooter style one we just endured have really gotten to me.  I'm ready for some sort of change because I'm tired of seeing them myself, I'm tired of thinking of ways to explain this to my kid as he gets older, I'm tired of having the monthly dinner conversation with my wife about a mass shooting in X, I'm just tired of it.  At this point to make a change it's probably much easier to start with guns and continue to work and develop mental health programs and policies just due to resources.  We can't increase the number of mental health experts or resources over night but we can change gun laws.  I hunt, I own guns and I don't want to give them up or think I'd have to under a changed law, but at this point something has to be done.  We can't keep burying our heads in the sand and say it's ok they used a gun because it's a mental health issue.
  • Anyone done Spaghetti Sauce with Fresh Home Grown Tomatoes?

After seeing the garden thread back in the spring the wife and I decided to give gardening a try this year and we planted some Roma tomatoes, pumpkin and a few other veggies.  The tomatoes really took off and we have way more ripe tomatoes than we know what to do with at this point.  We've been giving them away to family and friends but they just keep coming, never thought 3 plants would've produced so much.  I'm trying to use some of these up before they go bad and thought a version of the family spaghetti sauce was a good idea.  I've only done it with canned tomatoes in the past so I'm not sure how exactly this will turn out but I'll be giving it a whirl when I wake up.  Anyone given it a try before?

I'm thinking the best way would be to par-boil the tomatoes for a minute or so to get the skins off easily and going from there.  Like I said I'm not sure but I'm planning on bringing my Grandad over for dinner after it's done to see what he thinks.  He's first generation Italian-American so it's his recipe I'm using as the base.  If he likes it then it's a hit and we'll keep doing it year after year.  It will be easy to tell if he likes it or not, typical first gen Italian-American, he can't hide his true feelings well even if he says one thing to make you feel better about it.

I bought ground pork, beef and veal to make some of our meatballs to go with it.  I'm planning on baking the meatballs this time on the Egg instead of the oven to see how they turn out that way.  I'll post pictures as I make progress but if anyone has attempted this and has insight I'd be glad to have it.
  • Mini Worth It???

I'm pretty new to the BGE, I just got my large at the November Dizzyfest so I've had it for a couple of months.  I have a Weber Kettle, WSM, and a gasser but I haven't touched those since I got the BGE and I'm using it almost every weekend.  I've been eyeing the Mini even before I got my Egg and saw a few of the Dizzyfest cooks had one in their area too.  It's just my wife and I and she likes simple food, mainly chicken, but I've been getting her to come around on Steaks and Pork over the last couple of years so I'm thinking the Mini would be good for us for what we cook.  I love the large and would never give it up, she's preggo with our first so I'll need the room and it's awesome for smoking, I just think it's a lot more than we need on most cooks for now.  We have the money to buy it, I'm just having a hard time pulling the trigger on the mini since I just got the large, the mini is pretty expensive and quite small, and we have the baby due in late April so I feel this need to save more than I ever have in the past.  So should I just go for it now or wait it out for a while longer?  Thanks for the input.
