I would like to do a prime rib dinner for 6 people. You know, the kind you get in a resrurant about the size of your hand and 3/4' - 1" thick. What cut of meat should I buy and approx. what weight?

standing rib roast, prime rib roast - Get the biggest one you can get or the biggest you can cook!!

Can always have left over meat!!

The cut of meat is going to be called a standing rib roast, or boneless prime rib roast. I suggest the standing rib roast with bone in, it's more impressive and many swear that cooking the roast with the bone in flavors the meat. I do know this, the ribs aid in slicing, serving, and they protect the meat from being overcooked. If you're cooking dinner for 6 people, tell the butcher you want a rib roast with 6 bones so each person gets one thick slice. Also, ask your butcher to "french" the bones for a more elegant presentation. Cook to 135 for MR, pull the roast, rest for 15-20 minutes and then slice. Serve a simple and traditional side sauce made of prepared horseradish and sour cream.

This is what I love. I didn't follow the sear so there was not the medium cooked ring one normally sees but dang it's good & better than any restaurant I've had.

Speaking of butchers and cuts of meat...which is the least expensive to buy meat from the butcher or the local grocer? Never really used a butcher before. I'm sure I can guess where the quality is though

When you're talking least expensive, it doesn't really apply to Prime Rib. Costco is always a good option. I looked at Prime Rib last week and it was $8.49/lb. at Costco. It's usually double that at a grocery or butcher.

My local Kroger almost always puts boneless Prime Rib (although not technically prime) on sale for the typical grilling holidays (Mem Day, Father's Day, 4th of July etc). It is often only $4.00/lb boneless. I am sure it is not the highest quality but the last one I did sure tasted great! I bought an extra and put it in the freezer.
